How do I cook a Wagyu bone-in sirloin?
Bring to room temperature for 30-45 minutes. Season with sea salt only. Sear over high heat in a cast iron pan — 3 minutes per side for medium-rare. Stand on the fat cap briefly to render it down. Wagyu fat has a lower melting point than standard beef so watch the heat carefully. Rest for at least 6 minutes before carving off the bone and slicing against the grain.
How does Wagyu bone-in sirloin differ from Wagyu ribeye?
The ribeye has more intramuscular marbling and a richer, more intense flavour thanks to the fore-rib section. The bone-in sirloin is slightly leaner but has that classic sirloin flavour — clean, refined and elegant — with the added depth of the bone. If you prefer maximum richness go ribeye; for balance and refinement go sirloin.
Where do the cattle come from?
Our Golden Herd Heritage Wagyu cattle are raised on lush pastures across the British Isles by a collective of passionate Wagyu farmers. Raised in a low-emission, pasture-focused system with additional feed grown on the farm to reduce food miles. Hand-selected from the top 1% of cattle at slaughter.
Is this the same as Japanese Wagyu?
No — our Golden Herd Heritage Wagyu uses Wagyu genetics crossed with British breeds, raised on British Isles pastures. The result is excellent marbling with a cleaner, grassier flavour profile than Japanese A5 Wagyu. More versatile as a full steak portion with a distinctly British Isles provenance.

Our team will get your order ready 24 hours before the date requested at checkout. Everything will be cut fresh, packaged with the utmost care by our team and then boxed with ice packs in our sustainable packaging, ready to be delivered Next Day.
Your order will be sent via DPD to the postal address given, on the day of delivery DPD will send you a one hour timeslot for when their driver will drop off to your location. The driver will leave safe if you are not in so the box can be left outside until you arrive back home.
Our cool boxes maintain the right ambient temperature for up to 48 hours so your box will always arrive fresh and chilled.
