Fillet cut from the largest part of the muscle, the chateaubriand is made up from three muscle areas that are expertly trimmed, tied and rolled by one of our butchers into what you know and love. The most tender cut on the beast, the Chateaubriand is known across the world as one of the most luxurious roasting cuts.
Taken from the hind-quarter, our fillets boast a little marbling running through the centre that will baste the meat throughout cooking - suitable as a sharing steak that can be pan seared and oven roasted, a truly fantastic section on the carcass.
