Our master sausage maker grinds the mixture coarsely and seasons with only salt and pepper to produce an old school classic sausage that brings out the pork flavour in the most humble way, totally on it's own.

Our sausages are made fresh daily and must be used within 2 days from being delivered or frozen. At Thomas Joseph we are trying to do things right - taking out the man-made preservatives that prolong shelf life and maintain pork's pink colour is just one of the ways that we are different from 99% of other sausage makers out there!
Just make sure to use them within two days or freeze them :).
