After the incredible Bespoke Edition back in June we wanted to try something a bit out there, ageing the most incredible Wagyu beef for 100 days seemed to tick all the boxes!
Hailed as some of the very best beef in the world, this beef looks mesmerisingly good. Over the course of 15 years Finca Santa Rosalia have reared pure Wagyu from scratch. Importing stallions and embryos from the most pure Wagyu bloodlines in Kobe to develop what they believe to be the best tasting meat in the world, combining Wagyu genetics with their own unique flavour from the Spanish terroir.
- Tom's note; this is next level wagyu beef with the perfect amount of age on it. The marbling is consistent throughout and once it hits the coals, the combination is just ridiculous, one not to miss!
Aged for 100 days, this will be off the charts! Expect a truly exceptional texture coupled with the delicate umami flavour profile of these incredible Wagyu cattle - one not to miss!
Santa Rosalia are at the forefront of sustainable Wagyu farming, producing their own organic fertiliser, biodegradable bedding and all of the additional feed on the land. The cattle live an entirely stress free life and this contributes enormously to the flavour and quality of the end product.
