Superb Fullblood Wagyu Carcass, Aged for 45 Days
Our second instalment of this mesmerising beef, what a thing of beauty! Superb marbling once again, close to the A5 Kagoshima Wagyu that we get in each week from Japan, this is breath-taking. All the cuts available again on the carcass, I have included the info from Chris below in case anyone new missed the last body we did. ENJOY!
From the Farmer, Chris Wilkinson:
"The cattle are raised on the lush pastures of the Norfolk Broads which also supports a vast range of bird life alongside the famous Horsey Seal Sanctuary, 2 fields away. The herd are carefully raised on grass and forage with some cereals grown on the farm to develop the rich marbling which develops that unique Wagyu flavour. We carefully tend to our cattle so that they are very docile and this leads to fantastic tenderness."
At TJB we are extremely selective about where we source produce from and Chris's animal husbandry at Wildfell farm is truly second to none. Having visited him and the cattle earlier this year it was evident that everything on his farm is geared towards a stress free environment for his herd and by growing additional fodder on the farm, it's as sustainable as Wagyu farming can be - truly brilliant.
