50 Day Dry-Aged Jersey x Wagyu (Jagyu)
Beautiful Jersey x Wagyu Body from Manor Farm just outside Norwich. A visually stunning piece that literally melts as we start to break it down - amazing! Jersey cows are actually known to be one of the most flavoursome beef breeds but due to their milk producing nature don't often get the spotlight.
This piece was selected by the team for our Bespoke Edition due to it's wonderful confirmation, colour and texture. At slaughter it had brilliant yellow fat that has aged beautifully. Kill date of 02.03.21, at the time of writing it is exactly 50 days and looks perfect. For those interested, PKIL stands for Private Kill as this was a bespoke slaughter.
