60 Day Dry-Aged Ex Dairy Swedish Red and White Rump
We took in a wonderful body of Ex Dairy Swedish Red and White from Fen Farm Dairy (where your Baron Bigod and Bungay Raw Butter comes from) in March, ageing the carcass for 35 days before breaking it down. We then aged the rumps, which are HUGE, for a further 4 weeks, personally selecting them to make their way to our Bespoke Editions page as they illustrate everything that our business is about;
The cattle are retired for 12-24 months on pasture, developing beautiful yellow fat and and undeniable incredible flavour. The rumps look phenomenal and were so big it was hard to take pictures of! Sold in 1kg or 2kg slices, this is the perfect steak for your BBQ - a real standout piece that will wow any crowd
