7 Day Dry-Aged, Free Range Pork - Hand & Spring
Another old-school classic that is unheard of these days, the Hand and Spring comes from the opposite side of the shoulder to where our Boston Butt comes from.
A phenomenally flavoursome cut that is ideal for pulled pork and low temp cooks, the Hand and Spring falls off the bone after around 4-6 hours.
If you haven't tried this old school cut before then it's definitely worth a go - cost effective and plenty to share!
As far as cooking goes, the same principles apply as if you were cooking a belly. Low and slow until cooked through and lots of heat to get the crackling going, job done!
