This is fresh and fiery with a sweet smoked finish and one of those products that’s way better than you expect it to be. We make ours using only finest quality pork, perfectly flavoured with smoked paprika and a blend of chillies, and then hung in large format Ox casings. And, just like the traditionalists in Calabria (the spiritual home of ‘Nduja), we smoke ours too, gently and for a total of 96 hours.
