As the name suggests, this is the big one - The Whole Hog!

Starting with the smallest and moving our way to the biggest, this course is designed for the meat eater who wants to learn about various different animals, techniques and get a real all-round understanding of how our butchery brings the animals from field to fork.

Before our butchery demonstration, students will be taken on a guided tour of Coxtie Green Farm, visiting all areas and animals to get an understanding of what regenerative agriculture is all about. Following the tour we will take a look at how the butchery operates, including the different techniques used to dry-age the carcasses that come through our door before starting demonstrations and of course student participation. Once all have had a good go at a few techniques, we will all enjoy a meal cooked outside on the Big Green Egg (not to be missed!).
