When cooked correctly (not overcooked), it has a tender, slightly dense texture with a clean, mineral-rich finish. Grass-fed ox liver tends to have a cleaner, less intense flavour than grain-fed, making it more approachable for those new to offal.
How do I cook ox liver?
Slice thinly (5-7mm) and soak in milk for 30-60 minutes to mellow the flavour — optional but recommended. Pat dry and season. Sear in a very hot pan with butter for 60-90 seconds per side — no more. Ox liver toughens quickly when overcooked; it should still be slightly pink in the centre. Serve immediately with caramelised onions and mash.

Our team will get your order ready 24 hours before the date requested at checkout. Everything will be cut fresh, packaged with the utmost care by our team and then boxed with ice packs in our sustainable packaging, ready to be delivered Next Day.
Your order will be sent via DPD to the postal address given, on the day of delivery DPD will send you a one hour timeslot for when their driver will drop off to your location. The driver will leave safe if you are not in so the box can be left outside until you arrive back home.
